Ingredients

  • 50 g Toor dal
  • 380 g Water (for the dal and the rice)
  • 0.4 g Turmeric
  • 0.1 g Asafoetida (hing)
  • 3 g Jaggery
  • 1 g Salt
  • 80 g Rice, white (ambemohar or another fragrant rice)
  • 10 g Ghee
  • 6 g Lemon juice

Method

  1. Rinse the toor dal in 3-4 changes of water until it runs almost clear, then leave it to soak for 15 minutes.
  2. Cook the dal with 230 ml water, the turmeric and the asafoetida until completely soft: 3 whistles in a pressure cooker (about 12 minutes), or 35-40 minutes in a covered pot, adding hot water as needed.
  3. Meanwhile rinse the rice and cook it with 150 ml water: bring to the boil, cover and cook on the lowest heat for 15 minutes, then leave it covered for 5 minutes.
  4. Whisk the cooked dal to a smooth purée, add the salt and jaggery and simmer for 3-4 minutes, adding hot water until it is like thick cream and pours from a spoon.
  5. Mound the hot rice on a plate, make a well in it, pour in the varan and top with the ghee. Squeeze the lemon over and mix it at the table. Varan bhaat opens a Maharashtrian festive meal and is offered to Ganesh at Ganesh Chaturthi.
