Ingredients

  • 220 g Long aubergines (talong)
  • 10 g Vegetable oil
  • 8 g Garlic
  • 40 g Onion
  • 100 g Tomatoes
  • 0.5 g Salt
  • 0.3 g Black pepper
  • 100 g Eggs
  • 160 g Steamed white rice (to serve)

Method

  1. Grill the whole aubergines directly over a gas flame, on a barbecue or under a very hot grill for 10-15 minutes, turning them, until the skins are blackened all over and the flesh has collapsed and is completely soft.
  2. Put them in a bowl for 5 minutes to cool a little, then peel off the charred skin and pull off the stems. Chop or mash the flesh roughly with a fork.
  3. Heat the oil in a frying pan over medium heat. Fry the chopped garlic for 1 minute, until pale gold, add the chopped onion and cook for 3 minutes, then add the chopped tomatoes and cook for 4-5 minutes, until they break down.
  4. Add the aubergine, salt and pepper and stir for 2 minutes, until hot.
  5. Beat the eggs and pour them over the aubergine. Leave them for 20 seconds, then fold gently for about 2 minutes, until they have just set in soft curds through the aubergine.
  6. Serve hot with the rice. In Ilocos it is eaten at any meal of the day, breakfast included; many cooks add a dash of fish sauce or bagoong, left out here to keep it vegetarian.
