Ingredients

  • 60 g Mung beans, dried
  • 450 g Water
  • 5 g Ginger
  • 10 g Sago or small tapioca pearls
  • 20 g Palm sugar (gula melaka) or dark brown sugar
  • 60 g Coconut milk
  • 0.2 g Salt

Method

  1. Rinse the mung beans in a sieve and pick out any small stones.
  2. Put the beans in a pot with the water, the ginger cut into thick slices and bruised, and a knotted pandan leaf if you have one. Bring to the boil, then simmer half-covered for 40-45 minutes, stirring now and then, until the beans have split and are soft. Add a little hot water if it gets too thick.
  3. Meanwhile, boil the sago in a small pan of water for 10-12 minutes, stirring often, until the pearls are clear. Drain them and rinse them under cold water so they don't stick.
  4. Add the palm sugar, chopped or grated, to the beans and stir for 2-3 minutes until it has melted. Stir in the sago.
  5. Stir the salt into the coconut milk. Pour most of it into the porridge and heat it gently for 2 minutes without letting it boil, or the coconut milk may split.
  6. Take out the ginger (and pandan), ladle the porridge into a bowl and swirl the last of the coconut milk on top. In Malaysia and Indonesia it is eaten warm for breakfast or at teatime.
