  • Makes: 1 serving (181 g)
  • Difficulty: Medium

  • Contains: dairy, egg

Ingredients

  • 150 g Eggs
  • 15 g Crème fraîche or double cream
  • 0.4 g Salt
  • 0.2 g Black pepper
  • 15 g Butter, unsalted

Method

  1. Separate the eggs. Whisk the whites in a large bowl with a balloon whisk for 3-4 minutes, until they are foamy and just hold soft peaks. At the inn on Mont-Saint-Michel the cooks still beat them in copper bowls, to a rhythm you can hear from the street.
  2. Beat the yolks with the cream, salt and pepper, then fold them gently into the whites, keeping in as much air as you can.
  3. Melt the butter in a 24 cm frying pan over medium heat until it foams, without letting it brown.
  4. Pour in the eggs. For the first minute draw the set edges gently towards the middle with a spatula, then leave it for 2 minutes, until the base is golden and the top is still soft and mousse-like. Cover it with a lid for the last minute if you like it more set.
  5. Fold it in half, slide it onto a warm plate and eat it at once, as it sinks as it cools. Annette Poulard cooked it over a wood fire for the pilgrims and travellers at her inn from the 1880s.
