- Preparation: 15 min
- Cooking: 30 min
- Makes: 1 serving (566 g)
- Difficulty: Easy
- Diets: Vegetarian
- Contains: celery, dairy, gluten
Ingredients
- 120 g Sweetcorn kernels (from 1 large cob, or frozen)
- 90 g Potatoes, peeled and diced
- 40 g Onion, finely chopped
- 20 g Celery, finely chopped
- 15 g Red pepper, diced
- 3 g Garlic, crushed
- 12 g Butter, unsalted
- 1 g Thyme, fresh leaves
- 0.5 g Smoked paprika
- 8 g Flour, plain (all-purpose)
- 90 g Vegetable stock
- 130 g Milk, whole
- 0.2 g Bay leaf
- 20 g Double cream
- 0.7 g Salt
- 0.3 g Black pepper
- 3 g Chives, snipped
- 12 g Oyster or saltine crackers (to serve)
Method
- Stand the cob in a wide bowl and slice down its sides to take off the kernels, then scrape the bare cob with the back of the knife to get out the milky pulp. Keep the cob. Dice the potato into 1 cm cubes, and finely chop the onion, celery and pepper.
- Melt the butter in a saucepan over medium heat and cook the onion, celery, pepper and thyme for 6-7 minutes, stirring now and then, until soft but not browned. Add the garlic and smoked paprika (which gives the smoky note bacon usually brings) and stir for 30 seconds.
- Sprinkle in the flour and stir for 1 minute. Pour in the stock a little at a time, stirring so no lumps form, then the milk. Add the potato, the bay leaf and the scraped cob, broken in half.
- Bring just to a simmer, partly cover and cook gently for 12-15 minutes, stirring often so the milk doesn't catch, until the potato is tender. Add the corn kernels and pulp and simmer for 5 minutes more.
- Take out the cob and the bay leaf. Mash or blend about a third of the chowder and stir it back in, so it thickens but keeps plenty of texture. Stir in the cream, salt and pepper and heat through without boiling.
- Ladle into a warm bowl, scatter with chives and serve with the crackers on the side or crumbled over the top.
