  • Contains: sulphite

Ingredients

  • 120 g Black-eyed peas, canned (drained and rinsed)
  • 30 g Red pepper
  • 30 g Green pepper
  • 20 g Red onion
  • 8 g Jalapeño pepper
  • 40 g Tomato
  • 25 g Sweetcorn, canned (drained)
  • 3 g Coriander leaves
  • 2 g Garlic
  • 10 g Red wine vinegar
  • 2 g Sugar
  • 0.3 g Ground cumin
  • 8 g Olive oil
  • 0.3 g Salt
  • 0.1 g Black pepper

Method

  1. Tip the black-eyed peas into a sieve, rinse them well under cold water and leave them to drain thoroughly.
  2. Finely dice the red and green peppers, the red onion, the deseeded jalapeño and the tomato, all about the size of the peas. Chop the coriander.
  3. Whisk the vinegar with the sugar, crushed garlic, cumin, salt and pepper until the sugar dissolves, then whisk in the olive oil.
  4. Put the peas, the diced vegetables and the sweetcorn in a bowl, pour over the dressing and toss well.
  5. Cover and leave it in the fridge for at least 30 minutes (overnight is even better) so the peas take up the dressing. Stir in the coriander just before serving, as a side to grilled food or with tortilla chips.
