Trenton Tomato Pie with Sausage and Mushrooms
One serving has 534 kcal and 25 g protein, and at least a fifth of a woman's daily need of selenium (75%), riboflavin (65%), niacin (62%), phosphorus (58%), thiamin (55%) and cobalamin (47%). Ready in 170 minutes.

- Preparation: 140 min
- Cooking: 30 min
- Makes: 1 serving (279 g)
- Difficulty: Medium
- Contains: beef, dairy, gluten, pork
Ingredients
- 55 g Strong bread flour
- 0.6 g Dried yeast
- 0.8 g Salt
- 36 g Lukewarm water
- 6 g Olive oil
- 40 g Italian sausage
- 30 g Mushrooms, sliced
- 65 g Canned crushed tomatoes
- 1.5 g Garlic, crushed
- 0.3 g Dried oregano
- 40 g Low-moisture mozzarella, sliced or grated
- 4 g Pecorino Romano, finely grated
Method
- Makes one 30 cm pie, cut into 4 servings; the amounts are for one serving, so multiply every ingredient by 4. Mix the flour, yeast and salt, add the water and a little of the olive oil, and knead for 8-10 minutes into a smooth, slightly tacky dough. Cover and leave in a warm place for 1½-2 hours until doubled.
- Put a pizza stone or heavy upturned baking tray on the lowest shelf and heat the oven as hot as it goes, about 260 °C (500 °F), for at least 45 minutes.
- Squeeze the sausage out of its skin and fry it in a dry pan over a medium heat for 5 minutes, breaking it into small pieces, until just cooked through; lift it out, then fry the mushrooms in the fat left in the pan for 4 minutes until their liquid has gone.
- Stir the garlic and oregano into the crushed tomatoes; in a Trenton pie the tomatoes go on uncooked.
- On a floured pizza peel or upturned tray, stretch the dough into a thin 30 cm round with a slight rim. Lay the mozzarella over the dough first, then spoon the tomatoes over the cheese in dollops, leaving some cheese showing, and scatter over the sausage and mushrooms.
- Drizzle with the rest of the olive oil, dust with the Pecorino and slide the pie onto the hot stone. Bake for 10-14 minutes until the base is crisp and spotted dark underneath and the cheese bubbles up through the tomatoes. Rest for 2 minutes, then cut into quarters.
