Ingredients

  • 150 g Aubergine, in 2 cm cubes
  • 0.5 g Salt
  • 40 g Long green peppers (sivri biber), in 2 cm pieces
  • 15 g Sunflower oil, for frying (the part absorbed)
  • 5 g Garlic, crushed
  • 5 g Tomato paste
  • 120 g Tomatoes, grated
  • 0.5 g Pul biber (Turkish chilli flakes)
  • 3 g Parsley, chopped

Method

  1. Toss the aubergine cubes with half the salt and leave them in a colander for 20 minutes, then pat them dry. This draws out bitter juice and stops them soaking up so much oil.
  2. Heat the oil in a frying pan over medium-high heat and fry the aubergine in one layer for 8-10 minutes, turning, until golden on all sides and soft inside. Lift it out onto paper. Fry the peppers in the same pan for 3-4 minutes until blistered, and lift them out too.
  3. Pour off all but a teaspoon of oil. Add the garlic and stir for 30 seconds, then the tomato paste for 1 minute, then the grated tomatoes, the rest of the salt and the chilli flakes. Simmer for 6-8 minutes until thick and jammy.
  4. Return the aubergine and peppers to the pan, fold them gently into the sauce and cook for 2 minutes, so they stay in pieces.
  5. Let it cool to room temperature and scatter with parsley. In Turkey şakşuka is a meze and a side dish, usually served cool, often with a spoonful of garlic yogurt alongside.
