  • Preparation: 30 min
  • Cooking: 95 min
  • Makes: 1 serving (400 g)
  • Difficulty: Medium
  • Diets: Dairy-free, High protein
  • Contains: beef, celery, egg, gluten, meat

Ingredients

  • 150 g Lamb shoulder, boned
  • 75 g Cooking apples (such as Bramley)
  • 60 g Onions, thinly sliced
  • 3 g Soft brown sugar
  • 0.3 g Ground allspice
  • 0.1 g Ground nutmeg
  • 0.5 g Salt
  • 0.2 g Black pepper
  • 50 g Lamb or beef stock
  • 55 g Shortcrust pastry
  • 6 g Egg, beaten, to glaze

Method

  1. Makes 4 servings in a 1.2 litre pie dish; the amounts are for one serving, so multiply every ingredient by 4. Heat the oven to 200 °C (400 °F). Trim the lamb of excess fat and cut it into 3 cm pieces, and peel, core and slice the apples.
  2. Mix the sugar, allspice, nutmeg, salt and pepper. Layer the lamb, apples and onions in the dish, sprinkling each layer with the spice mixture and finishing with a layer of apple.
  3. Pour in the stock; it should come about halfway up the filling.
  4. Roll out the pastry a little larger than the dish, dampen the rim, lay the pastry over and press it down to seal; trim, crimp, cut a steam hole in the middle and brush with beaten egg.
  5. Bake for 20 minutes until the pastry starts to colour, then cover it loosely with foil, lower the oven to 160 °C (325 °F) and bake for 1¼ hours more, until a skewer pushed through the hole meets tender lamb. Rest for 10 minutes before serving.
