  • Cooking: 65 min
  • Makes: 1 serving (412 g)
  • Difficulty: Easy
  • Diets: Pescatarian
  • Contains: dairy, egg, fish, gluten

Ingredients

  • 120 g Floury potatoes
  • 12 g Butter
  • 75 g Whole milk
  • 25 g Onion, finely chopped
  • 70 g Canned pink salmon, drained
  • 2 g Parsley, chopped
  • 0.2 g Dried summer savory (sarriette)
  • 0.4 g Salt
  • 0.2 g Black pepper
  • 67 g Shortcrust pastry
  • 5 g Egg, beaten, to glaze
  • 5 g Plain flour
  • 30 g Frozen peas

Method

  1. Makes a 23 cm pie, 6 servings with a white sauce with peas; the amounts are for one serving, so multiply every ingredient by 6. Peel the potatoes, cut them into chunks and boil for 15-20 minutes until soft; drain and mash with a third of the butter and a splash of the milk.
  2. Meanwhile soften the onion in another third of the butter over a medium heat for 6-8 minutes. Drain the salmon, lift out the skin and the larger bones (the small soft ones can be crushed in), and flake it into the mash with the onion, parsley, savory, half the salt and the pepper.
  3. Heat the oven to 200 °C (400 °F). Line a 23 cm pie dish with a little more than half the pastry, fill it with the salmon mixture and smooth the top. Cover with the rest of the pastry, seal and crimp the edges, cut a few steam slits and brush with beaten egg.
  4. Bake for 35-40 minutes until golden brown, then rest for 10 minutes.
  5. Meanwhile make the sauce: melt the rest of the butter in a small pan, stir in the flour and cook for 1 minute, then whisk in the rest of the milk and simmer for 3-4 minutes until smooth and thick. Add the peas and the rest of the salt and simmer 3 minutes more. Serve each slice with the sauce spooned over.
