  • Preparation: 30 min
  • Cooking: 45 min
  • Makes: 1 serving (102 g)
  • Difficulty: Easy
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten, nut

Ingredients

  • 15 g Dates, pitted and chopped
  • 0.4 g Baking soda
  • 21 g Boiling water
  • 5 g Butter, softened (for the cake)
  • 16.5 g Sugar
  • 4.2 g Egg
  • 0.4 g Vanilla extract
  • 16 g Plain flour
  • 0.3 g Baking powder
  • 0.1 g Salt
  • 4.2 g Walnuts, chopped
  • 6 g Brown sugar (for the topping)
  • 3.8 g Butter (for the topping)
  • 3.8 g Whipping cream (for the topping)
  • 5 g Desiccated coconut (for the topping)

Method

  1. Put the dates in a bowl, sprinkle over the baking soda and pour over the boiling water. Leave them for 15-20 minutes to soften; the water will foam a little.
  2. Heat the oven to 180 °C (350 °F). Butter a 23 cm square cake tin and line the base with baking paper.
  3. Beat the butter for the cake with the sugar until well mixed, then beat in the egg and vanilla. Mix the flour, baking powder and salt, and stir them in, alternating with the dates and their water, until just combined. Fold in the walnuts.
  4. Pour the batter into the tin and bake for 35-40 minutes, until the cake is risen and a skewer pushed into the middle comes out clean.
  5. Near the end, make the topping: put the brown sugar, the butter and the cream for the topping in a small pan, bring them to the boil and let them bubble for 3 minutes, stirring. Stir in the coconut.
  6. Spread the topping over the hot cake and put it under a hot grill (broiler), about 12 cm from the heat, for 2-3 minutes, until bubbling and golden. Watch it all the time: it burns quickly.
  7. Leave the cake to cool in the tin, then cut it into 12 squares. Makes 12 squares; the amounts are for one serving, so multiply every ingredient by 12 for the whole cake.
