  • Preparation: 390 min
  • Cooking: 15 min
  • Makes: 1 serving (135 g)
  • Difficulty: Easy
  • Diets: Vegetarian
  • Contains: alcohol, dairy, gluten, honey

Ingredients

  • 12 g Sugar
  • 2.7 g Cocoa powder
  • 4 g Cornflour
  • 0.1 g Salt
  • 60 g Whole milk
  • 6.7 g Plain (semisweet) chocolate, chopped
  • 0.7 g Vanilla extract
  • 27 g Graham crackers
  • 20 g Double or whipping cream
  • 1.7 g Icing sugar

Method

  1. Makes one 23 x 33 cm cake, cut into 15 pieces; the amounts are for one piece, so multiply every ingredient by 15 for the whole cake.
  2. For the pudding, whisk the sugar, cocoa, cornflour and salt together in a saucepan, then gradually whisk in the milk until smooth. Bring to the boil over a medium heat, whisking constantly, and let it bubble gently for 1-2 minutes, until thick. Off the heat, stir in the chocolate until it melts, then the vanilla. Leave to cool for 10 minutes, stirring now and then.
  3. Spread a thin layer of the pudding over the bottom of a 23 x 33 cm dish and cover it with a layer of graham crackers, breaking some to fill the gaps. Repeat twice more, so there are three layers of crackers, and finish with the rest of the pudding.
  4. Press cling film onto the surface and chill for at least 6 hours, or overnight, until the crackers have softened into cake.
  5. Shortly before serving, whip the cream with the icing sugar to soft peaks and spread it over the top. Cut into 15 pieces. It keeps for 2 days in the fridge.
