  • Preparation: 50 min
  • Cooking: 60 min
  • Makes: 1 serving (97 g)
  • Difficulty: Easy
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 25 g Roasted chestnuts, peeled
  • 22 g Sugar
  • 0.5 g Vanilla extract
  • 15 g Water
  • 10 g Butter, softened
  • 16.5 g Eggs
  • 5 g Plain flour
  • 3 g Dark rum

Method

  1. Make the chestnut cream: put the chestnuts, sugar, vanilla and water in a pan, bring them to the boil and simmer, covered, for 15 minutes, until the chestnuts are very soft. Uncover and simmer for 5 minutes more, until the syrup thickens. Blend it all to a smooth, thick cream and leave it to cool until just warm.
  2. Heat the oven to 180 °C (350 °F). Butter a 22 cm round cake tin and line the base with baking paper.
  3. Beat the butter into the chestnut cream until smooth. Beat in the eggs one at a time, then stir in the flour and the rum.
  4. Pour the batter into the tin and bake for 35-40 minutes, until the top is golden brown and a skewer pushed into the middle comes out with a few moist crumbs: the cake should stay soft and moist inside.
  5. Leave it to cool in the tin for 20 minutes, then turn it out. It is best cold, and better still the next day. Cut it into 10 slices. Makes 10 slices; the amounts are for one serving, so multiply every ingredient by 10 for the whole cake.
