  • Cooking: 60 min
  • Makes: 1 serving (68.2 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten, nut

Ingredients

  • 15.5 g Butter, softened
  • 11 g Fine semolina (sugee)
  • 11 g Egg yolks
  • 6 g Egg whites
  • 14 g Caster sugar
  • 0.3 g Vanilla extract
  • 1.9 g Brandy
  • 6 g Ground almonds
  • 2.5 g Plain flour

Method

  1. Beat the butter until pale and creamy, then stir in the semolina. Cover the bowl and leave it at room temperature for 2 hours (or overnight in the fridge, bringing it back to room temperature), so the semolina soaks up the butter.
  2. Heat the oven to 160 °C (325 °F). Butter a 20 cm square cake tin and line it with baking paper.
  3. Beat the egg yolks with half the sugar until thick and pale, then beat them into the butter and semolina with the vanilla and brandy. Fold in the ground almonds and the flour.
  4. In a clean bowl, whisk the egg whites to soft peaks, then add the rest of the sugar a spoonful at a time and whisk until stiff and glossy. Fold them into the batter in three batches.
  5. Spread the batter in the tin and bake for 50-60 minutes, until deep golden and a skewer pushed into the middle comes out clean. If the top browns too quickly, cover it loosely with foil.
  6. Leave it to cool in the tin, then cut it into 16 squares. It is richer and moister the next day. Makes 16 squares; the amounts are for one serving, so multiply every ingredient by 16 for the whole cake.
