  • Difficulty: Easy

  • Contains: alcohol, celery, dairy, gluten, sulphite

Ingredients

  • 85 g Pearl barley
  • 150 g Vegetable stock
  • 300 g Water
  • 8 g Olive oil
  • 30 g Shallot
  • 120 g Chestnut mushrooms
  • 3 g Garlic
  • 1 g Thyme, fresh
  • 40 g Dry white wine
  • 10 g Butter, unsalted
  • 20 g Parmesan, grated
  • 0.3 g Salt
  • 0.2 g Black pepper
  • 4 g Parsley, fresh

Method

  1. Rinse the barley in a sieve. Heat the stock and water together in a small pan and keep them at a bare simmer.
  2. Heat the oil in a heavy pan over medium heat and cook the chopped shallot for 3 minutes, until soft. Add the sliced mushrooms, crushed garlic and thyme leaves and cook for 5-6 minutes, until the mushrooms are browned and their liquid has gone.
  3. Add the barley and toast it for 2 minutes, stirring. Pour in the wine and stir until it has been absorbed.
  4. Add the hot stock a ladle at a time, stirring often and adding more when the last is nearly absorbed, for 35-40 minutes, until the barley is tender but still pleasantly chewy. Barley gives off less starch than rice, so it needs stirring often, not all the time.
  5. Take the pan off the heat and beat in the butter and Parmesan with the salt. Cover and leave it for 2 minutes: it should be creamy and flow slightly when you shake the pan.
  6. Season with pepper, scatter with chopped parsley and serve. Orzotto is the risotto of the Alps, from Friuli to Trentino, where barley grew better than rice.
