- Preparation: 45 min
- Cooking: 40 min
- Makes: 1 serving (351 g)
- Difficulty: Medium
- Diets: Vegetarian
- Contains: dairy, egg, gluten, sulphite
Ingredients
- 31 g Flour, plain (all-purpose)
- 0.5 g Salt
- 12.5 g Butter, unsalted, cold
- 39 g Milk, whole (for the pastry and the filling)
- 60 g Spinach
- 15 g Broad beans, shelled
- 44 g Double cream
- 25 g Egg
- 0.4 g Tarragon, dried (or a little fresh, chopped)
- 0.2 g Black pepper
- 25 g Cheddar cheese, grated
- 40 g Lettuce (to serve)
- 50 g Tomato (to serve)
- 5 g Olive oil (for the salad)
- 3 g Cider vinegar (for the salad)
Method
- These amounts are a quarter of a 20 cm quiche, which serves four. For the pastry, rub the flour, a pinch of the salt and the cold butter together until it looks like breadcrumbs (the original recipe uses half butter and half lard; all butter keeps it vegetarian). Stir in 1½ teaspoons of the milk per serving and bring it into a dough. Wrap and chill for 30 minutes.
- Heat the oven to 190 °C. Roll the pastry out to about 3 mm, line the tin, prick the base, line with baking paper and baking beans and bake blind for 15 minutes; then take out the paper and beans and bake for 5 minutes more until pale golden. Lower the oven to 160 °C.
- Wilt the spinach in a dry pan for 1-2 minutes, cool it, squeeze out all the water and chop it roughly. Boil the broad beans for 3 minutes, drain, and slip off the grey skins if you like.
- Whisk the rest of the milk with the cream, egg, tarragon, the rest of the salt and the pepper.
- Scatter half the cheese over the pastry case, then the spinach and broad beans, and pour the egg mixture over. Sprinkle the rest of the cheese on top.
- Bake for 20-25 minutes, until just set in the middle and lightly golden. Leave it for 10 minutes before cutting. Serve warm or cold with the lettuce and tomato dressed with the oil and vinegar. It was the official dish of King Charles III's coronation in May 2023.
