  • Preparation: 25 min
  • Cooking: 55 min
  • Makes: 1 serving (350 g)
  • Difficulty: Easy
  • Contains: beef, dairy, egg, gluten

Ingredients

  • 100 g Potatoes
  • 33 g Onion, chopped
  • 5 g Butter
  • 57 g Canned corned beef
  • 0.3 g Black pepper
  • 67 g Shortcrust pastry
  • 8 g Egg, beaten, to glaze
  • 80 g Frozen peas

Method

  1. Makes a 23 cm pie, 6 servings with peas; the amounts are for one serving, so multiply every ingredient by 6 (one standard tin of corned beef makes the whole pie). Peel the potatoes, cut them into 2 cm cubes and boil for 10-12 minutes until just tender; drain and leave to steam dry.
  2. Meanwhile soften the onion in half the butter over a medium heat for 8 minutes. Break the corned beef into a bowl with a fork, add the potatoes and onion, season well with the pepper (it needs no salt) and mash lightly so it holds together with some chunks of potato left.
  3. Heat the oven to 200 °C (400 °F). Line a 23 cm pie dish with a little more than half the pastry, spoon in the filling and level it.
  4. Brush the rim with beaten egg, cover with the rest of the pastry, press and crimp the edges, cut a steam slit and brush the top with egg.
  5. Bake for 30-35 minutes until golden brown all over, then rest for 10 minutes.
  6. Just before serving, cook the peas in boiling water for 3 minutes, drain and toss with the rest of the butter. Serve each slice with the peas.
