  • Preparation: 80 min
  • Cooking: 60 min
  • Makes: 1 serving (168 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 31 g Shortcrust pastry
  • 94 g Whole milk
  • 0.6 g Vanilla extract
  • 19 g Eggs
  • 16 g Sugar
  • 7.5 g Cornflour

Method

  1. Makes one deep 24 cm tart, cut into 8 slices; the amounts are for one slice, so multiply every ingredient by 8 for the whole tart. Heat the oven to 190 °C (375 °F).
  2. Line a 24 cm tart tin about 3 cm deep with the pastry, prick the base and chill for 15 minutes. Line with baking paper and baking beans and bake for 15 minutes, then remove the paper and beans and bake for 5 minutes more.
  3. Heat three-quarters of the milk with the vanilla until it steams. Whisk the eggs, sugar and cornflour with the rest of the cold milk until smooth, pour on the hot milk while whisking, then return it all to the pan. Cook over a medium heat, whisking constantly, until it boils and turns very thick, and let it bubble for 1 minute more.
  4. Turn the oven down to 180 °C (350 °F). Pour the hot custard into the pastry case and smooth the top.
  5. Bake for 30-35 minutes, until the custard has puffed slightly and its top is browned in patches.
  6. Leave to cool in the tin for at least 1 hour, as the flan firms up while it cools, then slice. Serve at room temperature or cold.
