  • Preparation: 135 min
  • Cooking: 40 min
  • Makes: 1 serving (209 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 8 g Raisins
  • 3 g Rum
  • 40 g Plain flour
  • 10 g Caster sugar
  • 0.1 g Salt
  • 16 g Cold unsalted butter, diced
  • 15 g Eggs, beaten
  • 4 g Cold water
  • 60 g Swiss chard leaves (green part only)
  • 8 g Light brown sugar
  • 4 g Parmesan, finely grated
  • 0.1 g Black pepper
  • 5 g Pine nuts
  • 35 g Apples (such as reinette or Golden Delicious)
  • 1 g Icing sugar, for dusting

Method

  1. Makes one 26 cm double-crust tourte, cut into 10 slices; the amounts are for one slice, so multiply every ingredient by 10 for the whole pie. Put the raisins to soak in the rum.
  2. For the pastry, mix the flour, caster sugar and salt, rub in the butter until it looks like breadcrumbs, then add a third of the beaten egg and the water and gather it into a soft dough. Wrap and chill for 30 minutes.
  3. Strip the chard leaves from their white stalks (keep the stalks for another dish), wash and dry them, roll them up and shred them very finely. Squeeze them hard, a handful at a time, to press out as much water as you can: in Nice the leaves go in raw.
  4. In a large bowl, beat the rest of the eggs with the brown sugar, Parmesan and pepper, then mix in the chard, the raisins with their rum and the pine nuts.
  5. Heat the oven to 180 °C (350 °F). Roll out a little more than half the pastry to 3 mm and line a 26 cm tart or pie tin. Spread the chard filling in it. Peel, core and thinly slice the apples and lay them over the top.
  6. Roll out the rest of the pastry, lay it over the apples and pinch the edges together to seal. Prick the lid all over with a fork.
  7. Bake for 35-40 minutes, until the pastry is golden. Leave to cool for at least 1 hour and dust with the icing sugar before serving; it is eaten at room temperature, and is as good cold the next day.
