  • Preparation: 70 min
  • Cooking: 18 min
  • Makes: 1 serving (75.6 g)
  • Difficulty: Easy
  • Diets: Vegetarian
  • Contains: dairy, gluten

Ingredients

  • 40 g Puff pastry, ready-rolled
  • 7.5 g Raspberry jam
  • 20 g Icing sugar
  • 3.1 g Cold water (for the icing)
  • 5 g Desiccated coconut

Method

  1. Heat the oven to 200 °C (400 °F) and line a baking tray with baking paper.
  2. Unroll the pastry and cut it into 8 rectangles, about 9 × 11 cm. Lay them on the tray and prick each one all over the middle with a fork, leaving a 1 cm border, so that it rises evenly and stays flat on top.
  3. Bake for 15-18 minutes, until puffed, crisp and a deep golden brown. If the middles have risen high, press them down gently with a clean tea towel. Leave them to cool completely, about 30 minutes.
  4. Spread a stripe of jam down the middle of each pastry, from one short end to the other.
  5. Stir the icing sugar with the water, a little at a time, until it is thick and smooth but just spreadable. Spread it over the top of each pastry, covering the jam, then scatter the coconut over at once so it sticks to the wet icing.
  6. Leave them for 20 minutes until the icing has set. They are best eaten on the day they are made. Makes 8 cheesecakes; the amounts are for one serving, so multiply every ingredient by 8 for the whole batch.
