  • Preparation: 200 min
  • Cooking: 60 min
  • Makes: 1 serving (92.3 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 16.5 g Eggs, separated
  • 12.5 g Caster sugar
  • 10.5 g Butter, melted and cooled
  • 9.5 g Plain flour
  • 42 g Whole milk
  • 0.4 g Vanilla extract
  • 0.1 g Salt
  • 0.8 g Icing sugar (to dust)

Method

  1. Heat the oven to 150 °C (300 °F) and line a 20 cm square cake tin with baking paper, letting it come up the sides. Warm the milk with the vanilla until lukewarm, not hot.
  2. Whisk the egg yolks with the caster sugar until pale and thick, then whisk in the melted butter. Whisk in the flour until smooth, then pour in the warm milk a little at a time, whisking, to make a very thin batter.
  3. In a clean bowl, whisk the egg whites with the salt to stiff peaks. Fold them into the batter in three batches, gently, with a whisk: the batter will stay runny with small lumps of white floating on top, which is right.
  4. Pour it into the tin and bake for 50-60 minutes, until the top is golden and the cake wobbles only slightly in the middle when you shake the tin.
  5. Leave it to cool in the tin, then chill it for at least 3 hours, until set: as it bakes it separates into a dense base, a layer of custard and a light sponge on top.
  6. Lift it out by the paper, dust the top with the icing sugar and cut it into 12 pieces with a sharp knife wiped between cuts. Makes 12 pieces; the amounts are for one serving, so multiply every ingredient by 12 for the whole cake.
