  • Preparation: 100 min
  • Cooking: 35 min
  • Makes: 1 serving (80.1 g)
  • Difficulty: Easy
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten, nut

Ingredients

  • 12.5 g Butter, softened
  • 14 g Caster sugar
  • 16.5 g Eggs
  • 12.5 g Ground almonds
  • 4 g Plain flour
  • 0.1 g Salt
  • 2 g Rum (for the batter)
  • 4 g Rum (to soak)
  • 12 g Icing sugar (for the icing)
  • 2.5 g Rum (for the icing)

Method

  1. Heat the oven to 180 °C (350 °F). Butter a 20 cm round cake tin and line the base with baking paper.
  2. Beat the butter and caster sugar until pale and fluffy, then beat in the eggs one at a time. Stir in the ground almonds, the flour, the salt and the rum for the batter.
  3. Spread the mixture in the tin and bake for 30-35 minutes, until golden and a skewer pushed into the middle comes out clean.
  4. While the cake is still hot, prick it all over with a skewer and spoon the rum for soaking slowly over it. Leave it to cool in the tin for 15 minutes, then turn it out onto a rack, top side up, and let it cool completely.
  5. Mix the icing sugar with the rum for the icing to a thin, smooth icing. Pour it over the cake and spread it over the top and down the sides in a thin layer. Leave it for an hour to set.
  6. It keeps well for several days wrapped, and the flavour improves after a day. Cut it into 10 slices. Makes 10 slices; the amounts are for one serving, so multiply every ingredient by 10 for the whole cake.
